CBD-infused Lunch and Dinner Recipes

1. Tangy CBD Tilapia

Start your CBD-infused meal cooking right with this simple fish recipe from CBD Dishes. You can’t go wrong with the combination of tangy lemon and slightly sweet tilapia. Pair it with your veggie of choice to complete this healthy meal.

Ingredients:

  • 4 tilapia fillets
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons melted CBD butter
  • 1 clove garlic
  • 1 teaspoon parsley
  • Salt and pepper to taste

Steps:

  1. Preheat your oven to 190°C. Apply non-stick cooking spray on a baking dish.
  2. Wash tilapia fillets with cool water, pat dry with paper towels, then place in a baking dish.
  3. Pour lemon juice on fillets. Add salt, pepper, parsley, and garlic.
  4. Bake fish for 30 minutes.
  5. Take out fish briefly to add CBD butter then bake for 2 more minutes.
  6. Serve warm.

2. Slow Cooker Mozzarella-stuffed CBD Meatballs

Ingredients:

Meatballs

  • ½ kilogram lean ground beef
  • ½ kilogram spicy Italian sausage
  • 1 cup panko breadcrumbs
  • ⅓ cup finely chopped onion
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 2 large eggs
  • 4 mozzarella sticks divided into 4-5 even pieces

Sauce

  • 7 cups tomato pulp
  • ⅓ cup finely chopped onion
  • 2 minced garlic cloves
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ½ teaspoon pepper

Steps:

  1. Put all sauce ingredients in a slow cooker and stir.
  2. Set slow cooker to high and cover for 30 minutes.
  3. Mix all meatball ingredients except mozzarella in a large bowl with your hands.
  4. Put a piece of mozzarella in the centre of a golf ball-sized meatball mixture. Repeat until you’re out of meat.
  5. Immerse meatballs in sauce in the slow cooker. Cover and cook for 2 ½ hours.

3. CBD-infused Fish Tacos

Savour the flavour with this delicious CBD-infused fish taco recipe. Taking a bite of fresh tortilla, perfectly seasoned fried cod, and a mix of tangy cabbage, avocado, and cilantro will be just like relaxing in a sunny seaside paradise.

Ingredients:

  • 0.7 kilogram cod
  • 8 – 12 corn tortillas
  • 1 avocado
  • 1 lime
  • 2 tablespoons lime juice
  • 2 teaspoons chili powder
  • ½ teaspoon ground cumin
  • ½ teaspoon cayenne pepper
  • ¼ cup mayonnaise
  • 2 tablespoons chopped cilantro
  • 2 cups shredded purple cabbage
  • 40 ml of CBD oil
  • salt and pepper to taste

Steps:

  1. Mix lime juice, chili powder, ground cumin, cayenne pepper, and CBD oil in a large bowl.
  2. Coat the cod with the mixture evenly. Let it set for 15 minutes then season with salt and pepper on both sides.
  3. Fry each side of cod on a large pan for 3 to 5 minutes. Let it sit for 5 minutes then pull fish apart with a fork.
  4. Mix cod in a large bowl with mayonnaise, cilantro, lime juice, and CBD oil.
  5. Put fish, cabbage, and avocado on tortillas. Squeeze lime on tacos.

4. CBD Pesto Pasta with Spicy Shrimp

Ingredients:

CBD Pesto

  • 2 cups fresh baby spinach
  • 1 cup fresh basil
  • ½ cup fresh Italian parsley
  • ½ cup cherry tomatoes
  • 1 tablespoon pine nuts
  • 2 teaspoons freshly squeezed lemon juice
  • ⅓ grated Parmesan cheese
  • 2 cloves garlic
  • 2 tablespoons olive oil
  • 1 teaspoon full spectrum CBD oil tincture
  • Pinch of salt
  • Pinch of black pepper

Spicy Shrimp Pasta

  • 8 ounces uncooked Gigli pasta
  • ½ kilogram peeled and deveined fresh shrimp
  • ½ kilogram asparagus cut into 2-inch pieces
  • ½ mixed cherry tomatoes, halved
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon ground red pepper flakes
  • 1 teaspoon cayenne pepper
  • Pinch of salt
  • Pinch of black pepper

Steps:

  1. Wash the leafy vegetables then blend them along with all pesto ingredients until it becomes a smooth sauce.
  2. Put pesto sauce in a small bowl using a spoon then cover with saran wrap. Refrigerate.
  3. Boil water in a large pot over high heat. Add uncooked Gigli noodles and follow package instructions.
  4. Rinse asparagus then cut into 5-centimetre pieces. Put asparagus in a boiling pot with pasta on the last 3 minutes of cooking time. Drain in a colander and set aside.
  5. Season shrimp with ground red pepper flakes, cayenne pepper, black pepper, and salt.
  6. Heat butter and olive oil in a large saucepan over medium heat until melted. Add shrimp and lemon juice.
  7. Cook until shrimp turns pink on both sides.
  8. Briefly saute pasta and asparagus with the shrimp in the pan once it’s cooked then remove from heat.
  9. Add 6 to 8 tablespoons of pesto sauce, cherry tomatoes, basil leaves, and a sprinkle of parmesan cheese.

5. Mixed Mushroom CBD Stew

Ingredients:

  • 4-6 tablespoons CBD olive oil
  • 2 rinsed and chopped leeks

  • 3 minced garlic cloves
  • 1 kilogram assorted mushrooms cut into uniform sizes
  • ½ ounce dried shiitake mushrooms
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 2 tablespoons chopped rosemary
  • 16 ounce pasta or rice of choice
  • Choice of meat if desired

Steps:

  1. Put dried mushrooms in a bowl with 1 cup hot water. Let it sit for 20 minutes.
  2. Heat olive oil in a large skillet. Saute leeks and carrots in a skillet for 8 to 10 minutes. Add meat if you want meat with your stew.
  3. Stir with garlic then put in a bowl.
  4. Put fresh mushrooms in the skillet and cook for 8 to 10 minutes.
  5. Add salt, pepper, and rosemary then put vegetables from the bowl back into the skillet with the mushrooms and the liquid.
  6. Cook pasta or rice according to instructions.
  7. Serve mushrooms with pasta or rice.
